It's Sushi Time...

Wow! It has been awhile since I posted anything on here. This semester really has been a killer and has taken all of the energy out of me. But I felt it was time to post something new. And why not start off with my day out with my mother.

Today was her birthday(should I dare tell her age) and I wanted to treat her.  Today was my mother's birthday and I wanted to take her somewhere different than just our regular old places. So we went to Saito's Japanese and Vietnamese Steakhouse and Sushi Bar. And boy oh boy, was it good. My brother, mother, and I tried some new types of Sushi and had some Chicken and Shrimp fried rice that was to die for.

Afterwards, we went to Sheridan's and ordered some custard. I got a brownie sundae that was heavenly. Then we all went home to spend some family time together. All in all, we had a great day! Happy Birthday mom <3

While Out…

I decided to bring my camera while the family and I went for a quick drive. For some reason I have been feeling like quite the photographer. And I have no idea why. But it was just too beautiful outside to pass up taking a few snaps while out. 

I a got a couple of pictures of the beautiful Memphis sky and of my handsome nephew laughing and smiling.

 I also got a picture of the dying corn crops that are found all around the city. It hurts seeing all that delicious corn dry roasting in the sun. Darn that pesky drought!

Flourless Peanut Butter Cookies!

Flourless Peanut Butter Cookies

I've got another quick and easy recipe for you guys. Unlike my last recipe that was no-bake, this recipe requires the oven. I know, I know. It's summer and it's hot everywhere, but I can promise you these flourless peanut butter cookies are worth making your house 100 degrees. 

These cookies were so unbelievable gooey and peanut buttery. And they kind of remind me of the peanut butter cookies from Subway, which I am obsessed with. Who would have thought you could make cookies without flour? Not me! And that is why I had to make them for myself. And I am now a believer. So this recipe is most definitely going in my OneNote Recipe Notebook. Enjoy!

Flourless Cookie Recipe

  • 1 cup of peanut butter
  • 1 cup of sugar ( I did 1/2 white sugar 1/2 brown sugar)
  • 1 egg
  • Finely chopped nuts

Directions

Preheat oven to 350°F.

Mix sugar and egg together, then add peanut butter. Form into 1" balls and press with fork.

Bake for 10 to 12 minutes. Makes about a dozen.

Easiest Fudge Recipe Ever!

Easiest Fudge - Frosting Fudge

This fudge was way too easy to be so delicious. This recipe took about 3 minutes to throw together and most of that was melting the chocolate chips! It only requires 2 ingredients  and each ingredient can be substituted to make the fudge better tailored to your palette. You can literally use any can of frosting and any type of morsel like chocolate, peanut butter, or butterscotch, and this recipe will turn out great. And to take it up a notch, add some candy or nuts to add to the smooth texture of the fudge. I am sure this recipe will be added to your collection. Enjoy!

Frosting Fudge Recipe:

  • 1 container of frosting (any kind you prefer)
  • 1 bag of chocolate chips (or peanut butter, butterscotch, etc)
  • Nuts, candy, or dried fruit(optional)

Directions:

  1. Melt morsels 
  2. Mix in frosting. 
  3. Pour into greased/lined 8x8 or 9x9 pan. 
  4. Chill for at least 4 hours.
  5. Slice into bars and enjoy!

Adorkable Is the New Hot!

Every Monday is "Whatta Man" Monday on ThatsWhatWeSaid. They poll the female audience on two or more men and we pick who the winner is. And last weeks men to pick from were John Krasinski and Joseph Gordon-Levitt for the "Quirky Guy" Edition. While I truly love both. I had to go with Krasinski. He just seems perfect to me. Funny, cute, smart. What else can you ask for in a man? Seriously girls we need to go with these guys and leave the "bad boys" alone.

But in no way are they the only two guys with the adorable dorky style. So I decided to make a list of all of my favorite adorkable celeb guys, whether they play adorkable on TV or are the real thing.

Maybe next I will post my favorite adorkable girls. It seems only fair, right?

Chewy Oatmeal Bars!

Oatmeal Chewy Bars


Today I made Chewy Oatmeal Bars. I originally wanted to make some old fashion granola bars with nuts and chocolate chips but I was missing a few key ingredients like nuts and chocolate chips(Lol). All I had was some Aldi's baking mix, quick oats, white sugar, and butter. The original recipe called for brown sugar and it probably would have been better for this recipe, but I didn't have any. So I used white sugar and add some a little syrup to the mixture. Also, I didn't have any extras like nuts or chocolate chips, so I added a tad bit more oatmeal to replace the missing items. Besides making a few tweaks, the bars turned out great. They were crunchy on the top and soft and buttery in the middle. I hope you try this recipe. Enjoy!

Before bars are baked.


After bars have baked for 17 minutes.

Ingredients

  • 1 1/2 cup baking mix
  • 1 1/2 cup quick oats
  • 1 cup white sugar or brown sugar (I only had white)
  • 1 stick of butter
  • 1 egg (I didn't have eggs, but I used 3 tablespoons of mayo)
  • 1/2 cup of chocolate chips, nuts, or dried fruit

Directions

Combine all ingredients in a bowl and mix until texture is crumbly. Then press mixture evenly into a lightly greased pan. Bake bars on 350 degrees for 15-17 minutes or until center is set. Let bars cool a bit, then cut into squares.

Celebs Read Mean Tweets...

about themselves. We all know how mean people can be on Twitter and people can be even more cruel to celebrities. So Jimmy Kimmel did a segment on his show about the abuse they receive everyday on Twitter and it is really funny. The video features celebs like Kristen Stewart, Matt LeBlanc, James Van Der Beek, Katy Perry, and Zooey Deschanel. But to me, the bit with Matt LeBlanc was the funniest. He was like "go bleep yourself" and that's always fun.

It is nice to see that some celebs can take a joke and not get too offended. I don't know if I could have been as cool, so kudos to them!
