Flourless Peanut Butter Cookies

I've got another quick and easy recipe for you guys. Unlike my last recipe that was no-bake, this recipe requires the oven. I know, I know. It's summer and it's hot everywhere, but I can promise you these flourless peanut butter cookies are worth making your house 100 degrees. 

These cookies were so unbelievable gooey and peanut buttery. And they kind of remind me of the peanut butter cookies from Subway, which I am obsessed with. Who would have thought you could make cookies without flour? Not me! And that is why I had to make them for myself. And I am now a believer. So this recipe is most definitely going in my OneNote Recipe Notebook. Enjoy!

Flourless Cookie Recipe

  • 1 cup of peanut butter
  • 1 cup of sugar ( I did 1/2 white sugar 1/2 brown sugar)
  • 1 egg
  • Finely chopped nuts

Directions

Preheat oven to 350°F.

Mix sugar and egg together, then add peanut butter. Form into 1" balls and press with fork.

Bake for 10 to 12 minutes. Makes about a dozen.

Easiest Fudge Recipe Ever!

Easiest Fudge - Frosting Fudge

This fudge was way too easy to be so delicious. This recipe took about 3 minutes to throw together and most of that was melting the chocolate chips! It only requires 2 ingredients  and each ingredient can be substituted to make the fudge better tailored to your palette. You can literally use any can of frosting and any type of morsel like chocolate, peanut butter, or butterscotch, and this recipe will turn out great. And to take it up a notch, add some candy or nuts to add to the smooth texture of the fudge. I am sure this recipe will be added to your collection. Enjoy!

Frosting Fudge Recipe:

  • 1 container of frosting (any kind you prefer)
  • 1 bag of chocolate chips (or peanut butter, butterscotch, etc)
  • Nuts, candy, or dried fruit(optional)

Directions:

  1. Melt morsels 
  2. Mix in frosting. 
  3. Pour into greased/lined 8x8 or 9x9 pan. 
  4. Chill for at least 4 hours.
  5. Slice into bars and enjoy!

Chewy Oatmeal Bars!

Today I made Chewy Oatmeal Bars. I originally wanted to make some old fashion granola bars with nuts and chocolate chips but I was missing a few key ingredients like nuts and chocolate chips(Lol). All I had was some Aldi's baking mix, quick oats, white sugar, and butter. The original recipe called for brown sugar and it probably would have been better for this recipe, but I didn't have any. So I used white sugar and add some a little syrup to the mixture. Also, I didn't have any extras like nuts or chocolate chips, so I added a tad bit more oatmeal to replace the missing items. Besides making a few tweaks, the bars turned out great. They were crunchy on the top and soft and buttery in the middle. I hope you try this recipe. Enjoy!

Before bars are baked.


After bars have baked for 17 minutes.

Ingredients

  • 1 1/2 cup baking mix
  • 1 1/2 cup quick oats
  • 1 cup white sugar or brown sugar (I only had white)
  • 1 stick of butter
  • 1 egg (I didn't have eggs, but I used 3 tablespoons of mayo)
  • 1/2 cup of chocolate chips, nuts, or dried fruit

Directions

Combine all ingredients in a bowl and mix until texture is crumbly. Then press mixture evenly into a lightly greased pan. Bake bars on 350 degrees for 15-17 minutes or until center is set. Let bars cool a bit, then cut into squares.

Throw Together Recipe: Crab Puffs!

Here’s a recipe that I threw together Thursday night. I decided to name it Crab Puffs. And it is super easy to make. If you have cream cheese, crescent rolls, and imitation crab, you are in business because those are the main ingredients. Just throw in some lemon juice, garlic, onion, and seasonings to taste and you have crab puffs.

This would go great with a fresh salad. The buttery crescent with the creamy crab really created a delicious combination of flavors. My family loved it and was asking for seconds. You have to try this. Happy Eating!

Mini Baker's Father's Day Cupcakes!

The Mini Baker posted some very interesting looking cupcakes on her blog recently and I thought they were just too adorable not to share. They are decorated with little ties and are the perfect dessert for Father's Day. And the recipe is very simple. So you can show your father with these cupcakes and not have to slave over the stove all day. What father wouldn't love that?

Nutella Cookies…Yum!

Yesterday one of my favorite Youtube chefs, Laura Vitale, showed us how to make cookies with Nutella. And I instantly started drooling because I am a huge fan of Nutella. I mean who doesn’t love that stuff? And of course the cookies looked so good. This is surely another recipe to add to my “Must Cook” list.

Oreo Pudding Poke Cake!

For Easter I decided to try a new dessert. For holidays, we usually make a cheesecake or something and call it a day. But I have been started following a few food blogs and wanted something different. So I decided to make a Oreo Pudding Poke Cake.

I found this recipe on The Country Cook blog (check it out!) and had to try it. You wouldn't believe how easy this cake was to make and how delicious it was. The only problem I had was that the pudding did not soak all the way down into the cake. But that is my fault. I think I let the pudding set up too much and that stopped the pudding from going down the holes I poked. But now that I know that, the next time I make this cake it will be 100% better.

Throw Together Recipe!

Earlier I looked in my cabinet and noticed I had some pizza dough mix and wanted to use it, but I did not have any of the ingredients to make a pizza. Bummer, right? So I searched far and wide for some easy and simple recipes using pizza dough and I found 2 good ones that featured ingredients I actually had. Check them out below

Garlic Knots
  • one package of pizza dough 
  • 3 tablespoons olive oil 
  • 3 gloves of garlic, minced 
  • 1/4 cup parmesan cheese
Preheat your oven to 400 degrees. In large bowl, combine olive oil and garlic at bottom. Using kitchen scissors or a knife, cut off 1 inch pieces of the pizza dough, dropping them into the bowl with the garlic/oil mixture. Toss them gently and place on a baking tray. Sprinkle with parmesan cheese and bake for 8-10 minutes, or until golden brown. These are best served immediately.


Cinnamon Sugar Bites
  • one package of pizza dough
  • 3 tablespoons ground cinnamon
  • 3 tablespoons sugar
  • 3 tablespoons butter, melted
Preheat your oven to 400 degrees. Add the melted butter to a large bowl. Using a kitchen scissor or knife, cut 1 inch pieces from the dough and drop into the bowl. Mix gently to make sure each piece has butter on it. Place on a baking tray and sprinkle the cinnamon and sugar over each piece. Bake for about 8-10 minutes, or until dough is brown and crusty. These are best served immediately.

But for this occasion, I decided to make the garlic knots and they turned out wonderful. The only thing that I did differently is add thick sliced cheese into the dough.
